SAVORY SAUTÉED MANGO

2 very ripe large mangos
1/2 cup water
2 tablespoons vegetable oil
1 tablespoon apple cider vinegar (or apple juice will do in a pinch)
1 package Simply Organic Fajita Mix

Preheat sauté pan on medium-high heat. In a small mixing bowl combine water, oil, vinegar and Simply Organic Fajita Mix. Set aside. Peel and slice mangos into silvers that are 2 inches long and 1/4 inch wide. Carefully add liquid mixture to pan, then add mango slices. Turn up heat to high and sauté 3 to 4 minutes with tossing constantly. Reduce heat if needed as not to burn. Sauce will thicken with cooking time.
