LOW CARB FLATBREAD

1 cup soy protein powder
1/4 cup inulin powder
1/2 teaspoon baking soda
1 package Simply Organic Alfredo Mix
1/2 cup water
1 lightly beaten egg
Olive oil for brushing
Flour for dusting

Preheat oven to 400° F and grease cookie sheet. In a large mixing bowl, combine all dry ingredients. Add water and egg and stir until dough is completely moist. Take a 3- to 4-inch ball of dough and knead. Dust with flour and form a patty; place on the cookie sheet. Repeat until all dough is used. Brush tops with olive oil and bake 3 minutes. Flip and brush other side with olive oil. Bake 3 more minutes.

Makes approximately 7 flatbreads.
