Citrus California Rolls
3 1/4 cups water
3 cups short-grain rice
1/3 cup rice wine vinegar
3 tablespoons
sugar 1 teaspoon
salt
3/4 cup prepared sushi rice
1 sushi nori sheet
thinly sliced cucumber, avocado and crab meat
2 to 3 tablespoons
Simply Organic Citrus A'peel Seasoning, coarse grind)
Bring water to a boil, add ingredients and cook until rice is tender, about minutes. Let cool.
Place nori sheet, rough side up, on a clean surface. Spread rice on nori in a thin layer, patting rice down with the back of a large spoon to ensure it sticks to nori. (Lightly grease spoon to keep rice from sticking to spoon.) Grind Simply Organic Citrus A’peel Seasoning over rice.
Carefully flip nori. At one end, layer a few slices of cucumber, avocado and crab meat. Fold nori to cover fillings; tuck and roll until at the end of the sheet (like rolling a sleeping bag!). Let roll sit for a few minutes and cut with a wet knife.
Note: For a slightly easier version, use 1/2 cup rice per sheet and do not flip the nori sheet over, rather just proceed with rolling.
Serve with soy sauce, wasabi and pickled ginger.
