STUFFED TOMATOES

4 just-ripened tomatoes
2 cups cooked rice
1/4 cup water
1 to 2 tablespoons Seafood Seasoning
1/2 cup shredded cheese

Preheat the oven to 350°F. Gently cut the core out of the tomatoes, making a cavity. Mix rice, water, Seafood Grilling Seasoning and cheese together. Fill tomatoes with mixture and place in baking pan. Cook for 30 minutes or until rice and tomatoes are tender.

Serves 4.

As prepared, each serving contains 90 calories, 1.5 g of fat, 5 mg of cholesterol, 160 mg of sodium, 15 g of carbohydrates and 4 g of protein.
