SOUTHWEST SEAFOOD SALAD

2 tablespoons oil
8 ounces chopped seafood (shrimp, scallops, etc,)
1 packet Mesquite Barbecue Marinade Mix
Fresh mixed greens
Shredded cheese
Cooked black beans
Salsa and sour cream

Heat oil in a skillet or wok. Add seafood and Mesquite Barbeque Marinade Mix, and sauté. Prepare fresh greens and place cooked seafood on top. Accent with black beans and shredded cheese. Add decorative dollops of sour cream and salsa.

Nutrition Facts:
As prepared, each serving of sautéed shrimp contains 280 calories, 16 g of fat, 170 mg of cholesterol, 1050 mg of sodium, 10 g of carbohydrates and 24 g of protein.
